Okay, time to think about the smaller
things that go into your luxury kitchen. This time we are talking about cutting boards. You will need more
than one cutting board and more than one shape for cutting different things.
Carving
Board
A roast requires
a carving board (like the one above) which is a totally different type of cutting board than a
green pepper or onion. You get the picture.
Wood
Cutting Boards
Start with
simple. You need to cut your bagels in the morning for the toaster. You certainly do not want to cut into your
counter top with a very sharp bread knife – not good for either one, plus the crumbs are messy to clean up. Use
a wood board, a butcher block or bamboo.
I like wood for many
different reasons. It feels better to my touch; yes that’s true, but one of the more important facts is that
wood has a natural immunity to bacteria. That is one of the main reasons that most chefs still use wooden
spoons and cutting boards in their own
homes when cooking.
Bamboo
Cutting Boards
The local health departments
want you to use plastic (which is made from petroleum) but wood is actually better. Eco-friendly
bamboo cutting
boards are beautiful, functional and
ecologically sound. Did you know that bamboo is actually a grass? So, when it is harvested it is like cutting
your lawn; it just re-grows. The fact of the matter is, compared to the same size stand of trees,
bamboo consumes five time the amount of Carbon Dioxide and produces 35% more
Oxygen.
Butcher Block
Cutting Boards
When you find
good butcher block cutting boards, I would encourage you to seriously think about using them. They are
wonderful to work with, they are gentle on your knives and clean up is easy. You can use bleach on it if you
wish. I use silver water instead.
Marble
Slabs for Pastry or
Candy Making
If you are a candy maker or a
baker, you might want to consider having a dedicated marble slab either laid into your countertop or have one that you can pull out to
use.
There is nothing
like working a mass of candy on marble. I know there are marble rolling pins, but it is much better to be rolling
out your pie dough or pastry on marble. It just works much better than anything else.

have to think about it. From then on you can enjoy them and make wonderful, delicious
treats.
